Dukan Galette with Cinnamon & Sugar-free Syrup

The Dukan Diet features a yummy oat bran galette (yes, it’s a low-carb fiber-filled pancake!) that you can enjoy every day. The oat bran fiber is helpful for obvious reasons, but the galette can be a little finicky. Try this recipe:

The Perfect Dukan Diet Galette

Makes 1 serving.

1 egg, slightly beaten
2 -3 T oat bran
1 1/2 T non-fat, plain greek yogurt (non-fat cottage cheese can be substituted)

Spray a small, non-stick omelet pan with non-stick spray and use medium heat. Mix all three ingredients together until combined. Pour mixture into hot pan. Cook until edges are defined (cooked) but middle is still gooey, then flip and cook until solid, about 1 more minute. Serve with sugar free maple syrup and enjoy The Perfect Dukan Diet Galette.

Don’t forget to sit down and breathe. Savor each bite. It’s important to take time to mindfully feed your body. I love the galette alone or with two eggs over light–or “dippy eggs” as they are known in rural Pennyslvania. Eating a healthy breakfast is that easy!

Oat bran: I prefer Bob’s Red Mill Oat Bran because it’s “pure organic” and sturdy. If you are having trouble finding it in your local supermarket, try Trader Joe’s, amazon.com, your local farmer’s market, or health food store. Expect to pay about $3.00 per 18 oz. bag.

Sugar Free Syrup: I suggest Maple Grove Farms Sugar Free Maple Syrup. Use sparingly if you have intestinal sensitivities.

Non-fat, Plain Greek Yogurt: I love this for the additional protein and “body.” Check the nutritional information and ingredients to make sure there is no added sugar.

FAVORITE Variation: Mix in any of the following: a handful of blueberries and 1/4 tsp. cinnamon. I even sprinkle cinnamon on top of the galette before I flip it because it adds a little more crunch.

Other suggestions: Diced saut├ęd veggies, or carob bits.
